Festive Recipes from Moonrise!

Stuck in a recipe rut?  Needing some fresh ideas for potluck/party dishes? We’ve got some wonderful herbal-inspired recipes that have been favorites here at Moonrise throughout the years that are sure to delight everyone’s palette!

 

-Almond Butter Dip-

2 cups Almond Butter (or Cashew, Sunflower, etc)

About a cup of water

Scallions and/or Chives/Garlic Chives

Tamari sauce

 

Blend almond butter and water to desired consistency.  Mince scallions/chives and add to taste.  Add tamari to taste and Voila!

 

-Taurus Mint Cookies

1 cup butter

½ cup cup sugar

½ teaspoon peppermint extract

2 Tablespoons dried peppermint leaves

2 cup flour

¼ teaspoon salt

 

Cream butter and sugar, add extract, mint leaves, flour and salt. Mix thoroughly.  Chill dough.  Form 1” balls and roll in sugar. Press with thumb.  Bake at 350 for 12 – 15 minutes.  Variations: Add chocolate chips and/or nuts.  Roll in mint sugar.

 

-Lemon Verbena Bread

1 cup sugar

¼ cup butter

¼ cup lemon verbena leaves, chopped

1 ½ cups sifted flour

1 tsp. baking powder

Pinch of salt

2 large eggs

½ cup milk (substitute non-dairy as desired)

grated rind of a lemon

¼ cup chopped nuts (optional)

 

Cream butter with verbena leaves. Add sugar, blend well, then add eggs, salt and remaining ingredients.  Grease 1 large loaf pan or 4 mini ones. Pour batter.  Bake at 350 for 30 – 45 minutes. Until it tests done with a toothpick.  Glaze (optional): ½ cup sugar, 2 TBS verbena leaves, juice of 1 lemon.  Gently heat until sugar becomes liquidy and ingredients blend.  Pour hot glaze over hot bread and allow to cool in pan.  When cool, remove from pan, wrap and allow flavors to meld overnight.

 

-Candied Curried Pecans

1 ½ tsp. Onion Powder

1 tsp Garlic Powder (or to taste)

1 ½ Course Kosher Salt

¾ tsp Curry Powder

¼ tsp Cayenne Powder

2 Tbs Butter

2 Tbs Honey

3 cups Pecan halves

 

Preheat over to 250.  Line large baking sheet with foil/parchment paper.  Mix spices and 1 tsp salt in small bowl to blend.  Melt butter and honey with ¼ tsp salt in heavy pan over medium heat.  Add pecans.  Toss to coat.  Spread in single layer on baking sheet. Bake until dry and toasted – about 40 minutes.  Cool completely.  Separate pecans if stuck together.

 

-Herbed Butter

Butter (desired amount)

Mixed herbs (Savory, Rosemary, Marjoram, Thyme, etc)

Garlic, minced (to taste)

Sundried tomatoes (optional)

 

Soften butter.  Blend to taste.  So simple but so good!
